Ingredients

Makes 8-10

plain flour      350g
baking powder    10g
unsalted butter  85g
caster sugar     50g
egg              55g
whole milk       120g
salt             3g

Egg wash
egg              1

Butter must be cold. Handle the dough as little as possible or they’ll be tough.
Press the cutter straight down without twisting or they won’t rise evenly.
Best eaten the same day.

Recipe

1. Heat the oven to 220°C and line a baking tray.

2. Mix the flour, baking powder, salt and sugar. Rub in the cold butter until it looks like breadcrumbs.

Paddle attachment on low. Stop as soon as it looks like breadcrumbs.

3. Beat the egg and milk together. Add to the mix and stir until it just comes together. Stop as soon as it does.

4. Tip onto a floured surface and pat to about 2.5cm thick. Don’t roll it.

5. Cut out rounds with a cutter, pressing straight down. Re-pat any offcuts and cut again.

6. Place on the tray and brush the tops with beaten egg.

7. Bake for 12-15 minutes until well risen and golden.
