~10 min bake, KitchenAid paddle

Ingredients

Makes ~24 cookies

unsalted butter      225g
light brown sugar    220g
granulated sugar     150g
eggs                 2
vanilla extract      10ml
flour                312g
bicarbonate of soda  5g
salt                 6g
toppings             ~250g

Crispy M&Ms, chocolate chips, or whatever you like.

Recipe

1. Mix:

[butter 225g, light brown sugar 220g, granulated sugar 150g]

Work up from low to medium speed until combined.

Flex edge beater, low to medium. It scrapes the bowl as it creams.

2. Add the eggs and vanilla extract and mix until combined.

3. Add:

[flour 312g, bicarb 5g, salt 6g]

Mix on slow to medium until combined.

4. Add toppings and mix.

5. Scoop small spoonfuls onto a baking tray lined with baking paper. Bake for roughly 10 minutes. Pull them out just before they start browning and let cool on a rack.

Freezer
Freeze: portion the dough into balls and freeze flat.
Bake: from frozen, add a minute or two to the time.
Keeps: 3 months frozen as dough, baked cookies a few days in a tub.
