Bagels

20 min bake, 230°C

Ingredients

Makes 6 bagels

flour   413g
water   270g
salt    8g
yeast   2g

Water bath
water   1.5L
honey   40g
salt    10g

Use bread flour for the right chew.
Instant yeast, not active dry. Water should be lukewarm.

Recipe

1. Add everything to a stand mixer with a dough hook. Mix on low to medium until it comes together, then knead for 5 minutes.

2. Into a greased bowl, cover and leave for 1.5 hours until doubled.

3. Divide into 6 pieces. Roll each into a tight ball, cover and rest for 15 minutes.

4. Push your thumb through the centre of each ball and stretch into a ring with a 2-3 inch hole. Place on a semolina-dusted lined tray.

5. Put them in the fridge overnight for more flavour.

6. Bring the water bath to a boil. Drop the bagels in and boil 1 minute per side.

7. Back onto the tray. Bake at 230°C for 20 minutes until golden.
